This healthy, fast and easy to make vegetable and meat skewer kebab grill recipe makes a picnic or barbecue lunch, party favorite or dinner. This recipe serves 4.
INGREDIENTS:
8 oz. crabmeat, cut into 3 inch x 1 inch strips
8 oz. sweet red peppers, deseeded and cut into 1 x 1 inch cubes
1 onion, coarsely chopped
½ cup sunflower oil
1 cup white wine
1 cup apple juice
½ cup lemon balm,chopped
toothpicks to secure kebabs
a spinach salad to serve
soft crusty rolls to serve
METHOD:
Combine onion, oil, white wine, apple juice and lemon balm. Add crab and sweet pepper pieces and coat thoroughly. Cover and chill for 5 hours.
Preheat grill to hot. Remove crab and peppers and drain well. Wrap crab around peppers and secure with a toothpick.
Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a spinach salad and soft crusty rolls.
