Ingredients:
1 3-pound chicken, cut into 10 serving pieces
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
2 tablespoons butter
1/4 cup finely chopped onion
1 tablespoon chopped garlic
1 tablespoon rosemary
2 tablespoons chopped green onions
3/4 pound mushrooms, cut in half
1/4 cup vermouth
2 tablespoons lemon juice
4 tablespoons chopped parsley leaves
Preparation:
Sprinkle chicken with salt and pepper.
Heat the oil in a non-stick frying pan. Add the chicken pieces, turning them frequently, and cook until golden brown - about 10 minutes. Take the chicken out of the frying pan and discard the oil.
Melt 1 tablespoon of the butter in the frying pan. Return the chicken to it and add the mushrooms, onion, garlic rosemary and green onions. Cook, stirring, for 5 minutes.
Add the vermouth and lemon juice and cook for 5 minutes, stirring. Add the remaining butter and parsley. Stir to blend and serve.
Serves four.
